Celery & Orange Winter Salad

Serves 2-3 people

  • 4 cups lettuce, torn into bite-size pieces

  • 1 large stalk celery, cut very thinly on the bias

  • A handful of celery leaves from the center of the stalk, roughly chopped

  • 2 oranges, skin removed and sliced into 1/4-inch thick slices and then quartered

  • 1 small shallot, finely diced

  • 1/3-1/2 cup Mary's Almost Famous Vinaigrette

  • 8 pitted Castelvetrano olives, torn into smaller pieces 

  • 2 Tbsp roasted salted cashews, roughly chopped 

  • 2 Tbsp freshly grated Parmesan cheese

  • Freshly ground black pepper

Arrange the lettuce on a large platter and scatter with celery slices, celery leaves, and oranges. Stir shallot into vinaigrette and drizzle evenly over salad (you might have some extra--don't overdress it! You can always save some for later :) Sprinkle with olives, cashews and Parmesan and garnish with freshly ground black pepper.
