Pine-Aperol Spritz

Easy-breezy and no-squeezy. As in, no juicing required. No lemons to squish or limes to roll. This spritz is your summer drink--simple to make, perfectly balanced with tropical notes, and not too sweet.

The only lift (if we can even call it that) is popping the cork on the Prosecco and slicing the grapefruit garnish. So grab your pool float and start relaxing. 


Serves 4

  • 6 oz pineapple juice

  • 6 oz Aperol

  • 6 oz coconut water

  • 1 bottle Prosecco (you'll have a little extra)

  • Thinly sliced grapefruit wedges for garnish

 

Fill 4 large goblets with ice and add 1 1/2 oz of each pineapple, Aperol, and coconut water to each glass. Top with a generous splash of Prosecco (about 4.5 oz) to each.

Stir and garnish with grapefruit wedge.
