Pineapple-Jalapeno Margarita

Makes 1

  • 3 cubes pineapple (ideally fresh, but frozen or canned  works too)

  • 3 thin slices jalapeno pepper, with seeds (add more if you like things really spicy!) 

  • 1 1/2 oz tequila blanco

  • 1 1/2 oz fresh lime juice, strained

  • 3/4 oz agave syrup

  • Lime wedges for serving

  • Kosher salt, if desired

In a cocktail shaker muddle pineapple cubes and jalapeño slices until smashed and juices are released. Add tequila, lime juice, agave, and 3/4 oz water to the shaker along with a cup of ice. Shake! Shake more until your arm is sore from shaking so much.

If you want a salted rim for your margarita, go around the top of a rocks glass rim with a lime wedge and then dip into kosher salt. Fill the glass with ice to the top and strain the margarita into the glass. Garnish with a fresh slice of jalapeño and a lime wedge. A leaf from the top of a fresh pineapple also makes a great garnish!
